I stumbled across this article. It looks like, other than fixing the ridiculously slow running on the intel Macs, there’s some rad new stuff.
The site also has a few tips and tricks and a section called PhotoShop 911, where you can query things that you might be battling with.

For me the biggest thing with CS3 is non-destructive filters. Whoo hoo!
